A baked bread or cake is referred
as biscuit. The term biscuit is derived from Latin word. In North
America it is also called as cookies. The biscuits come in many flavors
and shapes. The popular flavors of biscuits are sweet, salty, cream,
chocolate, cardamom flavor, jeera flavor, coconut biscuits, glucose
biscuits,etc.
Biscuits are prepared using baking powder or baking soda as a leavening
agent rather than yeast. They can be prepared both domestically and
industrially. For preparing biscuits, the popular machines used are as
follows :
- Dough Mixers
The first step for preparing biscuit is to prepare proper dough.
Dough are prepared by using either horizontal blade mixer or
vertical mixer. The mixers have either single blade or double blade.
- Dough Sheeter
Dough are converted into sheets through two roll sheeter or three
roll sheeter.
- Sugar and salt applicators
The sheets are carried through conveyors to another section which
has sugar and salt applicators. As per requirement sugar or salt is
added to the sheets. The salt or sugar is applied uniformly.
- Moulder and Cutter
The sheets are then carried to the molding section. The cutter cuts
the sheet into uniform size which is later molded by molder in a
definite shape and size.
- Oven
Oven has baking chamber and consists of many trays. They are heated
either through burner or through electric heating system. Apart from
chamber there are other independent heating zone. The exterior of
the oven and the oven chamber is made of special steel.
