Blanching Machine
Blanching is a process which
inactivates the enzymes through special heat treatment. This heat
treatment is applied accordingly and depends upon the specificity of
vegetables. Though it destroys enzyme, it retains the nutritional value
and the taste of the vegetables. They are applicable for the blanching
of different types of agricultural products like asparagus, soybean,
potatoes, mushrooms, etc.
How does a Blanching Machine works? Blanching units are of different types. The blanching machine consists of a roller chain and a axial rod which goes through a specially made basket to form a conveyor set. The vegetables or other ingredients are put inside the basket and then transported into the bucket with hot water for blanching. The temperature adjustment in the unit is automatic. There is a conveyor system which convey the materials vertically, horizontally, or at an inclination. Belt, screw and chain conveyors are used for horizontal and inclined conveying whereas, bucket elevator and pneumatic conveying are meant for vertical conveying. For the blanching unit water heater is must. Blanching unit has a central cylinder through which the hot flue gases pass to heat the water, which is stored in a concentric outer cylinder. The materials are placed in stainless steel perforated cages and immersed in the hot water. The unit consists of central heating cylinder, outer cylinder, asbestos rope insulation, stainless steel perforated cages, grate, stand and gate valve. After treatment, the vegetable products are air dried. |
