Candy is a rich sweet confection
made with sugar which is often flavored or combined with fruits or nuts.
For preparing candies, sugar is dissolved in water or milk to form a
syrup. Later it is boiled until it starts caramelizing. Candies are
prepared by using various methods involving different solvents which
results in different types of end products. Depending on the solvents
and the processes, the end products are of different types like hard,
soft, chewy or brittle. The preparation of candies involve different
techniques and machines which are as follows :
- Batch Cooker
Batch cooker is used for the production of high boiled sugar. It
can handle both cold slurry of raw materials and precooked sugar
solution. The cooker comprises of steam pressure vessel, vacuum pump,
heating coil, vapor extraction chamber, feed pump etc. Slurry is fed
by the pump through a heating coil and into a vacuum extraction
chamber. The plastic sugar then passes to the receiving pan for
vacuum treatment.
- Flavor Mixer
In a flavor mixer the flavors are mixed with colors and acids into
the boiled sugar mass in order to prevent evaporation and ensure
that a fully uniform product is obtained. Here mixing is carried out
by two teflon coated arms. Sugar is poured into the mixer bowl which
is transferred into the mixer using trolleys. After the completion
of the process the sugar mass is send for kneading.
- Kneader
In a kneader sugar mass is kneaded by two water-cooled arms.
Kneader mixes the ingredients, colors and flavors in an uniform
manner. The lifting device in the machine lifts the bowl from the
flavor mixer onto the working table.
- Batch Roller
The batch roller molds the high boiled sugar, toffee, caramel, etc
into a conical shape for feeding to the rope sizers.
- Rope Sizers
From batch roller the products passes to a rope sizers from where
it is send to sweet forming machine.
Candy Forming Machine
The candy forming machine is designed for the continuous production of
seamless sweets, with or without center filling, using a standard die
arrangement.
