Cheese Processing Machines
Cheese is another important by
product of milk. It is derived from the English word chese or Latin word
caseus. The manufacturing of cheese involves long process of converting
of milk into curd which is later processed into cheese. Using different
types of bacteria, molds, techniques of processing etc, different types
of cheese are produced across the world.

The first step in cheese processing is pasteurizing of milk which is done in pasteurizer unit thereafter cream is added in certain quantities for getting desired types of cheese. Some cheese making units make use of continuous in-line analyzer for regulating cream addition. From the pasteurizer, milk flows to the cheese vat which is either horizontal or vertical. The sizes of different cheese vat vary. There is a magnetic flow meter in modern day cheese making unit which regulates the flow rate from pasteurizer to vat. Starter and rennet are added accordingly to produce curd. Whey, which is the watery part of the milk and the curd are pumped to cheddaring operations without the need to predrain any whey. Whey is pumped into storage tank whereas curd is transferred to other unit where it is salted. Normally swinging dispenser is used for distributing salt. The salted product is then transferred to cylindrical moulds which have the draining holes. After coming out of the mould cheese are smoothened. The presser press the cheese in different sizes. The cheese press comes in variety of shapes and sizes. The cheese blocks are later cut in desired shapes using automatic cutters, manual cutters or heavy duty cutters. They range from single stage cutters through to a multi stage machine able to cut the block in both orientations. |
