Removing of water from the milk
in vacuum results in evaporated milk popularly called as condense milk
plant. After evaporating, milk is sterilized, homogenized and sealed in
cans. Evaporated milk is a light creamy color milk which is used where
fresh milk is not available. It is also used as tea or coffee whitener.
The steps involved in producing evaporated milk are as follows :
- The milk is heated to destroy the possible microbes.
- The heating avoids coagulation during sterilization process.
- Milk is concentrated in evaporators.
- Before cooling milk is homogenized.
- The milk is sterilized by placing it in autoclave.
- Coagulation is checked before it is packed in sterilized cans.
