A meat smoker is an assembly of
various tools that is used for preparing different types of meat. Meat
smokers are of three types - wood burning smokers, gas grills and newer
water smokers. However wood smokers are more preferred. Meat smokers are
normally made up of stainless steel. Following are the features of meat

- A meat smoker consists of fire box, a smoking chamber, heat
chamber and drain pan which separates smoking chamber and heating
chamber. The pan helps in the transfer of heat from the heating
chamber to the smoking chamber.
- There is a damper which connects smoking chamber with fire box
for controlling flow of smoke and heated air.
- A meat smoker further comprises of top oven placed above fire
box.
- Oven consists of heating plate facilitating the transfer of
heat.
- For collecting ash, there is an ash box.
- Chimney is designed for keeping the temperature constant and for
retaining the heat.
- The sizes and the capacities of meat smokers vary.
